You would think because of its high prices in stores Basil Pesto would be difficult to make, but I think you will be pleased to find how incredibly simple it actually is. There is one important piece of equipment you will need, and that is a food processor.
If you don’t yet have a food processor, I suggest that you strongly consider purchasing one as it is a great investment that is infinitely useful in the kitchen. You can use a blender if that is all that you available to use. Ingredient wise, everything you need for this Basil Pesto recipe should be readily available at your local supermarket.
Basil Pesto Ingredients (1 batch)
1000 g Basil
100 g Pine nuts
20 g Dijon mustard
20 g Garlic
10 g Salt
5 g Cracked black pepper
50 g Parmesan cheese grated
500 ml Olive oil
Homemade Basil Pesto -Preparation:
Begin by placing the freshly picked basil leaves into the food processor along with a small amount of oil. Blend until the basil is finely chopped.
Next you add the pine nuts into the mix and blend it up again until it is a smooth paste. Once that is complete, add in the mustard, the garlic, salt and pepper, and grated Parmesan cheese.
Slowly add more olive oil allowing time for the basil to gradually become a puree. Be sure to pay attention and not add oil too fast. Once you think the consistency is right, add additional salt, pepper, and olive oil to further perfect the taste and consistency.
Make sure to store the Pesto in an airtight container to preserve freshness.
The great thing about Basil Pesto is that you can easily adjust the ingredients to your taste. You can substitute pine nuts for something like walnuts, or if you are looking for a bolder tasting Pesto, try using Romano in place of the Parmesan cheese. This homemade Basil Pesto goes great with pasta or spread over toasted slices of baguette. There are several possibilities, it is really only limited by your imagination.
