Ingredients Vermicelli Noodle Salad (serves 4 -6 people)

Vermicelli Noodle Salad400 g Vermicelli noodles

100 g White onions

40 g Spring onions

100 g Celery

300 g Pork

200 g Shrimps

4 g  Red chili

40 ml Lime juice

40 ml Thai fish sauce

40 g Brown sugar

4 g Maki seasoning

Preparation:

First, take your noodles and let them soak in cold water for a while, until they become soft. Once soft, cut the noodles into 10cm lengths and place them in a bowl.

Prepare the white onions by slicing them Chinese style, and the spring onions by slicing them into lengths. The celery should be chopped on an angle. Once they are all prepared, mix in the sliced vegetables together with noodles.

Next, you need to blanch the ground pork and the shrimp. Once they are both cooked through, add them to the noodles.

To make the dressing, mix together to taste the following ingredients:  the lime juice, fish sauce, brown sugar, maki seasoning, and chopped chili.

Just before you are ready to serve, pour the dressing over the salad and ensure that there is enough to produce a sauce in the bottom of the plate.

The unique Thai-style dressing really both enhances this dish and transforms it into a lovely noodle salad. This is a great recipe to bring to barbecues, picnics, potlucks, or parties, where it will surely be a hit. The brown sugar in the dressing helps to marry the flavors of the seasonings and the chili pepper. An interesting serving idea would to be to scoop some of the dressed noodle salad onto a fresh bun to create a simple and delicious sandwich.
